The five main stats are as follows: Vitality, Endurance, Strength, Willpower, and Proficiency.

Resistances
Determines how resistant your character is to status effects such as Poison, Chaos, Hallucination, etc.
Max Health
Determines how much health your character has.
Max Stamina
Determines how much stamina your character has. More stamina means you may dodge, block, and attack more often, and run for longer periods.
Attack DMG
Determines how much damage your character inflicts.
Determines how much damage you take from enemy attacks. This number is increased by equipping better armor.
Having a higher weight limit means you may wear heavier armor, which leads to better defense. Being over the weight limit will have your character moving slower and using more stamina.

Dodging costs less stamina.
Guard Stamina DMG Decrease
Guarding costs less stamina.
Stamina DMG Increase
Attacking inflicts more stamina damage on the enemy. This allows you to put an enemy in an exhausted state quicker.
Stamina Recovery Rate
Determines how fast your stamina bar refills.
Received Stamina DMG Decrease
Determines how fast your stamina depletes when enemies deal damage.
