According to the voice actor, Tite Kubo is actually at work from morning till night every day. The author has also provided some original scenes for the anime. Shanks saves Luffy from a Sea King and loses his arm in One Piece.

There are several scenes in the anime that do not directly correlate with the manga. For example, the manga begins with Shanks saving Luffy. However, in the anime, this scene was shown as a flashback. This was done keeping in mind some essential rules of anime and the effect it will have on TV ratings. Eiichiro Oda himself is quite satisfied with such changes and even loves them.
